Moorish Sweet Potato Fingers
I could smell baking in the oven when I walked into the house and saw Chloe tossing sweet potato in a bowl. Well they were a hit so if you have a large family you will probably need to cater at least one sweet potato per person. We love to make these when we have a family movie night as a healthy snack (recipe below).
These moorish sweet potato fingers are a lazy Sunday afternoon treat, especially on a cool, cloudy, lazy afternoon that is perfect for curling up on the couch reading a novel. Say goodbye to microwave popcorn and bring back the good old fashion bakes. Needless to say how many interesting ingredients are hidden in the microwave popcorn that I used to think smells delicious, the smell of the fumes when the popcorn is popping in the microwave is actually toxic. I noticed this the last time we had young people in the house who brought some over and I felt sick with the smell of popcorn and later read and article that it was toxic. Our bodies are great at telling us these things that we often ignore.
Sweet Potato Fingers
2 large Sweet potatoes
1 teaspoon each of cumin, paprika and chilli powder (optional)
1 tablespoon organic extra virgin coconut oil
Himalayan sea salt to taste
Putting it all together
1. Preheat oven 180 degrees celsius and prepare 2 baking sheets.
2. Place coconut oil in a large bowl. If it is solid then place the bowl over some hot water to melt.
3. Toss in the sweet potatoes and toss over with tongs. Sprinkle over the spices and salt. Toss to coat evenly and spread on baking trays.
4. Bake for around 40 minutes tossing half way until they are cooked through. Extend the time if needed
