I was very excited when I was starting my garden and people gave me seedlings for different plants. Amaranth was very familiar to me yet I didn’t know the benefits for the garden and for health. I grew up having to amaranth in soups and didn’t know how else to use it until I just decided to try it with coconut oil and garlic one day.
I love the brilliant colours displayed in the this amazing plant. Once planted it grows like a week and self seeds. I like to harvest it once a week so it doesn’t go to see so fast. I like to just quickly stir fry it with some chopped garlic and a little coconut oil. It’s a lovely last minute addition to soups and curries. It’s a great replacement for spinach and can be used when spinach is not available.
Benefits: The richness of the colour tells me there is a lot of iron in there
Most people would know of this as a grain. I love to make the most of it as a vegetable before it goes to seed.
Don’t grow it and would like to try it. Available in the summer in Asian food stores. It’s not expensive to buy though if you like to grow your own food, it is a flourishing addition and once you start growing it, it will self seed every year. It does like some water though and not being dried out.
