Easy Carrot and Fennel Soup with Essential Oils

  • 2 Carrots cut into 4 pieces each
  • 1 Fennel thickly sliced
  • 1 Onion peeled and cut in two
  • 1-2 stems of coriander roots (optional)
  • 2cm knob of ginger
  • 1-2 tablespoons of coconut oil
  • ½ teaspoon of Coriander powder
  • ½ teaspoon of Cumin powder
  • ½ teaspoon of Tumeric powder
  • pinch of cayenne pepper to taste or optional
  • 1 heaped tablespoon of TM stock
  • 600g boiled Water or to cover the vegetables
  • Fennel, Dill, Black Pepper and Coriander oils
  1. In Thermomix,
  2. Add onion, ginger coriander roots to the thermomix bowl. Chop 3 seconds/speed 6
  3. Scrape down the ingredients and add coconut oil and spices, not the oils.
  4. Cook for 3 min/Varoma/speed 1
  5. Add carrots and fennel. Chop 6 seconds/speed 6
  6. Add stock and boiled water
  7. Cook 15 min/speed 1
  8. If the bowl is over half full then pour some out into another bowl so the soup is only half way up the bowl. Blend 40 sec/speed 9 turning up to speed 5 first then gradually up to speed 9/
  9. Repeat with the remainder. If you find it is too thick add a little water to the consistency you like.
  10. Add salt and pepper to taste if you need it.
  11. Add 1 drop of each oil and stir 10sec/speed 3
  12. Cooking on the stove
  13. Warm up a saucepan
  14. Chop onion, coriander root and ginger. place together in a bowl.
  15. Dice carrots and fennel
  16. Add coconut oil to the saucepan. Saute onion, garlic and coriander roots on low heat until the onion looks clear.
  17. Add carrots and fennel, saute for 1 minute
  18. Add stock and water, simmer with the lid on the saucepan for 15 minutes
  19. Blend soup with your favourite blender till smooth
  20. Add salt and pepper to taste if you need it.
  21. Add 1 drop of each oil and stir in before serving
  22. Sprinkle with chopped coriander to serve
